Rob and I are on an avocado kick. Tonight I pulled together what I had in the fridge for a delicious Avocado, Bean, and Corn Salad:
1 semi-ripe avocado, diced
3 medium tomatoes, diced
1 cup fresh cut sweet corn
1 can black beans, drained
juice from 2 medium lemons
1/2 teaspoon cumin
1/2 teaspoon chipotle chili pepper
dash Tabasco
Mix together. Let the flavors blend for 15 to 30 minutes. Serve on a bed of fresh greens. Yumcious!
I think I'll add some papaya or mango next time.
If you don't have the exact ingredients it's easy to substitute, such as lime juice for lemon. Frozen corn for fresh. Etc.
